Stuffed Dates with Peanut Butter and Dark Chocolate

Trust me, peanut butter, medjool dates and dark chocolate are matches made in heaven! This recipe requires only three ingredients and definitely hits the spot when wanting something a little sweet.

Ingredients

12 - 14 medjool dates

Peanut butter or any nut butter of choice, I used Mayver’s Crunchy Peanut Butter

100g dark chocolate, roughly broken into small pieces, I used Lindt 90% Cocoa

Optional - rose petals, coconut or chopped nuts for decoration

Method

  1. Remove seed from date and slice in half, leaving one side of the date un-cut

  2. Stuff each date with a generous amount of peanut butter and close up the date

  3. Place stuffed dates into freezer for 15 minutes to allow the peanut butter to harden

  4. Meanwhile melt chocolate over stovetop and line a tray or plate with baking paper

  5. Once the chocolate has melted, remove the dates from freezer

  6. Using a fork coat the outside of each date with the melted dark chocolate. You can also sprinkle some rose petals or similar for decoration but make sure to do this before the chocolate starts to set

  7. Place the coated dates back into the freezer to set completely

  8. Store dates in the fridge, or the freezer if you’re wanting to keep them for longer
