Coriander Dressing
This is a great recipe to use if you have any leftover herbs sitting in your fridge for no intended use. This recipe can also be adapted to suit other herbs, just taste it as you go and adjust the quantities if needed. I like adding this recipe to salads, vegetables, chicken, fish, legumes and rice. It’s very versatile. Here pictured I have added this dressing to a salad of watercress, roasted parsnip, walnuts and avocado.
Ingredients
Big bunch of coriander leaves and stems
½ cup extra virgin olive oil
½ lemon, juice only
1 clove garlic, crushed
Pinch Celtic sea salt
Pinch cayenne pepper, adjust quantity to suit your spice preference
Method
Add all ingredients into your blender or food processor, starting with the liquid ingredients first.
Blend until smooth.
