Pan Con Tomate

Pan Con Tomate is a Spanish recipe that is basically tomato, garlic and extra virgin olive oil on toasted bread and it’s delicious! It’s kind of like the Spanish version of bruschetta.

Serves 1

Ingredients

Good quality sourdough bread, I used Panna Artisan Buckwheat Sourdough

1 tomato (you will need ~1/2 a tomato per slice of bread)

1 clove of garlic, pealed and chopped in half

Extra virgin olive oil

Salt, I used Celtic

Method

  1. Cut tomato in half and grate the flesh into a bowl. Add a drizzle of olive oil, salt to taste and stir. With the tomato skin that is left over from grating I usually just eat it but you could use it in a tomato based sauce or just discard it if you like.

  2. Toast bread

  3. Once bread has been toasted generously rub the garlic over one side of the bread

  4. Top bread with tomato mixture

  5. Drizzle with olive oil
