Clove & cinnamon spiced granola
Homemade granola is not that hard to make and in my opinion it tastes better too! Another plus is you know exactly what’s in it and you’re making one that’s a lot lower in sugar compared to a lot of store-bought granola’s! I love eating mine with a good source of protein and/or fat to help support my blood sugar levels, like some coconut yoghurt or on top of a protein-rich smoothie bowl!
Ingredients
2 cups rolled oats
1 cup pecans, roughly chopped
1 cup almonds, roughly chopped
1 cup shredded coconut
1/4 cup extra virgin olive oil
2 tbs raw honey or pure maple syrup
3 tsp ground cinnamon
1/2 tsp ground cloves
Method
Preheat the oven to 150 degrees Celsius.
Firstly whisk the spices, olive oil and your choice of sweetener together so that they are mixed well. If using raw honey you may need to melt the honey into more of a liquid to help it mix evenly into the wet mixture.
Add all remaining ingredients and mix in well with hands to ensure wet mixture is evenly coated over the dry mixture.
Add granola onto a lined baking tray and bake for 15 minutes. Then turn your oven off and leave granola in oven for a further 15 minutes.
Remove from oven, granola will crisp-up once cooled down.
SERVING SUGGESTIONS: I love to serve this with some yoghurt and frozen blueberries as sweet snack or adding a sprinkle on top of smoothie bowls
